Where did the Thai Coffee Recipe originate?

 Authentic Iced coffee is known as ‘Oliang’(In Thai) and comes from a Teochew dialect, in which the ‘O’ means ‘black and ‘Liang’ means cool. This drink has a very profound aroma. Since it is made from roasted coffee beans it gives a very smoky effect. 

Thai coffee recipe comprises three main ingredients – coffee, condensed milk, and spices such as cardamom that are directly added to the coffee beans before brewing, it has a very refreshing smell.

To brew the coffee, a filter is used to make traditional Thai iced coffee, it is called a tungdtom or a coffee sock filter. This filter is a cotton bag attached to a metal handle. The ground coffee beans and the spices are placed into the cotton bag, and hot water is poured through it. Then the coffee drips through the bottom of the bag into a heat-resistant cup. This process should take about five minutes to complete, then ice and sugar are added.

Thai Iced coffee can be found in any corner of Thailand, and of late it is consumed all over the world, due to its freshness and aroma, especially on a hot summer day!

In the older days, Thai iced coffee was served black and sugar was just added to make the drink sweet.

Now, Thai iced coffee is made with strong coffee beans which gives off a rich smell and flavor, and just to balance this flavor they add condensed milk and a dash of spices. The funny part is the Thai coffee is so creamy, even though there is no cream added. This is due to the art of continuous stirring. It is quite similar to Vietnamese Coffee, both made from strong rotated coffee beans, however, they are both brewed differently.

Thai Coffee Recipe

The Traditional Recipe

Ingredients you will need.

  • 3 Tbsp (45 ml) Thai coffee powder
  • ¾ cup boiled water
  • 2 tbsp sweetened condensed milk
  • 2 tsp sugar
  • Pinch of salt
  • A lot of ice
  • 2 – 3 tbsp evaporated milk

Method of Preparation

  1. Combine the coffee with hot water and let it steep for 5 minutes. You can do this inside a cloth filter bag set in your mixing jug, in a French press, or directly in the mixing jug if you will filter it through a dripper later.
  2. In a mixing glass, combine condensed milk, sugar, and salt.
  3. When the coffee is ready, strain/filter it and pour the coffee into the mixing glass.
  4. Stir to dissolve the condensed milk and sugar. Taste the coffee and adjust the sweetness as needed, but keep in mind it should taste a little too dark and a little too sweet at this point as the ice will dilute the coffee later. You can hold the coffee at this stage until ready to serve.
  5. When ready to serve, fill a 16 oz serving glass completely with ice, then pour the coffee over the ice. 
  6. Drizzle the evaporated milk on top and watch the beautiful cascade! Mix the evaporated milk in before drinking. Feel free to add more evaporated milk to adjust the creaminess to your liking.

Thai Iced Coffee with hints of warm cardamom and a touch of almond extract

 Ingredients you will need

  • Double-strength brewed coffee
  • Half & Half or Cream
  • Sugar
  • Ground cardamom (Cardamom gives the coffee a warm-spice flavor. You can use either green or black cardamom, or in a pinch, ground cardamom.)
  • Almond extract

 Method of Preparation

  1. Smash the cardamom pods to release their flavor and aroma. just gently tap the pods until the outer shell is cracked. 
  2.  In a saucepan over medium heat, bring half-and-half or cream, sugar, and cardamom pods to a simmer, turn off the heat and allow to steep for 15 minutes. 
  3. Remove the cardamom pods then add the almond extract.
  4. Fill 4 tall glasses to the brim with ice. Divide the flavored half-and-half or cream between each of the 4 glasses. Then slowly pour the coffee into each glass.

Variations of Thai Coffee Recipe

  1. 6 tablespoons whole rich coffee beans, ground fine
  2. ¼ teaspoon ground coriander powder
  3. 4 or 5 whole green cardamom pods, ground
  4. Place the coffee and spices in the filter cone of your coffeemaker.
  5. Brew coffee as usual; let it cool.
  6. In a tall glass, dissolve 1 or 2 teaspoons of sugar in an ounce of the coffee (it’s easier to dissolve than if you put it right over ice).
  7. Add 5-6 ice cubes and pour coffee to within about 1″ of the top of the glass.
  8. Rest a spoon on top of the coffee and slowly pour whipping cream into the spoon. This will make the cream float on top of the coffee rather than dispersing into it right away.
